The Delicious Vegetable Broth Experiment!

So not too long ago we became part of a local co-op to get fresh produce.  The co-op is great, but I’ll tell you more about that next time!  Anyhow, since we’ve joined, we have an abundance of extra veggie scraps to use.  It’s pretty amazing how quickly these things pile up.  Throwing them out seemed pretty wasteful, so we had to find some way to use them.

Figuring It Out

Well after a bit of research I decided to try to make some vegetable broth.  Looking through various search results, it seemed everyone had a special way of doing it.  There were all sorts of different ingredients, and certainly a wide array of measurements.  Following any one of these probably would have worked, but I didn’t want to have the broth come out horrible.  So like a busy little researcher, I spent the better part of a day checking and double checking.

Ultimately, I ended up winging it, which is pretty much how a lot of my cooking goes.  In fact, after all my fact-finding, I had decided to make the vegetable broth in our pressure cooker.  However, when it came time to do it, I ended up deciding to boil it instead.  As you can tell, flying by the seat of my pants is sort of habit!  So now for the vegetable broth…

Experiment Underway

I pulled the vegetable scraps we’d been saving for a week or two out of the freezer. I grabbed our pressure cooker pot, which holds well over a gallon.  Then I chopped up some of the frozen onions, carrots, and celery. I sautéed that up with some olive oil and garlic.  While I had that going, I brought a gallon of water to a boil.  Meanwhile, I separated out all of the vegetables I planned to throw in.  We basically had a mixture consisting of potato peels, celery stalks, a couple radish pieces, carrots, onion extras including the peels, various peppers, and more.

All of this went in the pot to become the broth.  I added a little salt, pepper, rosemary, and basil.  After that, I let it boil down for about an hour and a half.  While it was cooking, the vegetable broth made the house smell great.  Once it was done, we added salt to taste and my girlfriend said it was great.  I tried it too, and can honestly say it was amazing.  After straining out the vegetables, we ended up with about 2 quarts worth of broth.


In writing this, I wanted to show you that making vegetable broth is not that difficult.  I didn’t want to give a specific recipe because frankly, I want you to just give it a try.  Trust me it’s pretty hard to go wrong!  I will certainly be making it again, and after a little more trial and error, I’ll post my favorite way to make it.  What I can tell you is it’s fairly easy to make, tastes way better than store-bought vegetable broth, and even saved us around $7.00.  After this little experiment, we won’t be going back to the store for vegetable broth again.  So give it a try yourself, and let us know how yours turns out!
